The antioxidants are determined by colorimetry. The ferric-tripyridyltriazine complex is reduced to the form ferrous-tripyridyltriazine in the presence of antioxidants; the complex loses its yellow color to a dark blue. This coloration measured at 595 nm is proportional to the concentration of antioxidants present in the samples. The method is standardized with regard to Trolox.
The ORAC values of date products are estimated at 18 900 to 24 300 (µmol TE/100g). If you then know that food with an ORAC value of 3000 to 5000 is already considered healthy, then you are in the right place with date products. The FRAP value of date products is estimated between 329 and 522 per 100 grams.
